Mayonnaise of Fail

My first time making mayonnaise ended with the first time I have ever gotten heartburn. Holy god in glory was that a long night.

So, first I decided to double the recipe. The recipe I followed suggested twice the amount of oil that I actually needed. Reading it again after the epic fail showed that at the very end that you should only use what was needed. I was less then happy.

So the whole thing was liquidy and separating. To fix the separating I put it in the fridge and let it separate as much as it would. I then poured off the excess. I had around 1 1/2 cups too much oil. And while it was still had far too much oil in it it was more sauce-like.

It tasted very good.

As for the heartburn, I am assuming that it was caused by the very potent garlic that I used and not the raw eggs. However, for safeties sake, I think I will be dumping what I made.
